Agave Pure Y2 Yeast
Specifically selected for Agave fermentations AGAVE PURE Y2 yeast is a fast-fermenting yeast capable of reaching 6%abv in 24h or 12% ABV in 72h. It creates a traditional estery style Tequila spirit enhancing the agave flavor note from agave syrup, agave nectar or traditional oven cooked agave juice.
Agave Pure N2 Nutrient + Buffering
Specifically formulated for fermentation with agave syrup, agave nectar or freshly cooked agave juice, AGAVE PURE N2 nutrient + Buffering is a complete nutritional support for your yeast.
How to make 1000L of Agave wash (Mosto) using the “Agave Pure” product combination.
Method
For fermentations using agave syrup ending with 6%v/v: add 170kg of Agave Syrup (75% sugars, 76% Brix). Top up the tank with ambient temperature water up to the 1000L mark. Add 2.0kg Agave Pure N2 to cooled agave juice ≤32°C, DO NOT BOIL THIS NUTRIENT. Dissolve, mix then add the rehydrated Agave Pure Y2 yeast. Ferment at 30-32°C ( Temp controlled with cooling).
For traditionally cooked agave using oven or autoclave (100% sugars from cooked agave) simply add 2.0kg Agave Pure N2 to cooled (≤32°C) agave juice (rinse and press enough cooked and shredded pinas to achieve a must of approx 12-13 Brix), Dissolve, mix then add the rehydrated Agave Pure Y2 yeast. Ferment at 30-32°C ( Temp controlled with cooling).
For other %abv’s using agave syrup/nectar see dosage table below. Note: if adding pure sugars like sucrose, glucose/dextrose to cooked agave or agave syrup, you may need to add more N2 than is advised below, contact our friendly tech support team for a customized solution.
Take gravity readings every 24h to monitor the fermentation.
For best results Distill using a copper pot still or a still with plenty of copper contact with the vapour phase.
