Seltzer Pure N1 and Y1

Seltzer Pure Y1 Yeast

A fast-fermenting dried yeast with a strong finish specifically selected for Hard Seltzer fermentation. Seltzer Pure Y1 yeast, known for its ability to ferment well and fast, creates a neutral flavor profile and boasts a strong finishing characteristic by efficiently consuming all sugars. This gluten-free yeast is also recognized for its capacity to reach 16% ABV, providing a clean and neutral base—essentially a blank canvas—allowing the Brewers’ creativity to shine, all while producing low esters.

Containing everything yeast require for fermentation, the Seltzer Pure N1 nutrient provides a comprehensive blend of micro and macro nutrients. Its two-stage buffer system eliminates the need for pH adjustment, ensuring a hassle-free fermentation process. Additionally, this nutrient is gluten-free and imparts a clean and neutral flavor to the base, enhancing the overall quality of your brewing experience.

How to make 1000L of 14%v/v Seltzer Base using the “Seltzer Pure” product combination.

Ingredients

Sugar — 236kg per 10hL

Hard Seltzers begin with with a neutral substrate. Sugar is used as it provides a clean and neutral substrate to produce alcohol.

Nutrients — 4.5kg of Seltzer Pure N1 per 10hL

Nutrients is the key to success. Without the right nutrients, yeast are unable to effiencently convert the sugar into alcohol. Yeast need more than just a carbon source, they require nitrogen, vitamins, magnesium and zinc as well as trace elements. One of the biggest obsticles with producing seltzer is pH, yeast naturally produce acids during fermentation but will go dorment if the pH lowers to 3. Seltzer Pure N1 contains everything the Yeast will need to ferment to 14% abv in four days.

Yeast — 1kg of Seltzer Pure Y1 per 10hL

Seltzer Pure Y1 is a hard seltzer yeast. It is crutial to producing a clean and neutral base for seltzer. It exceeds where brewers yeast fails as it has high alcohol tolerance (up to 18%abv) and a extremely neutral palate.

 

Method

1. CIP and clean the fermenter to prepare for fermenting Seltzer base.

2. Add 236kg of sucrose or 249kg of dextrose monohydrate(glucose) to 600L hot water (70°c) and dissolve. Top up to 1000L with hot water. Boil if deemed necessary.

3. After cooling the sugar solution to <30°c add 4.5kg of Seltzer Pure N1 and dissolve for 10 minutes.

4. Add 1kg of Seltzer Pure Y1 yeast by ideally rehydrating the yeast first(see instructions below) then adding to fermenter OR sprinkling the dried yeast directly onto the wort.

5. Turn on aeration for the first 10 minutes (if possible).

6. Let the fermenter temperature fall naturally to 25°c, then control the temperature at 25°c throughout the fermentation.

7. Take gravity readings every 24h to monitor the fermentation. At day 4 take a gravity reading at 90h, 94h and 96h. If the gravity is <0.990 and the gravity reads are steady (not falling) the fermentation is ready for harvesting. Note: if adding other fermentable substances or adjuncts such as malt or rice malt syrup the gravity may be higher than 0.990 at 96h.

8. Cold crash and filter as soon as possible after the fermentation is finished. Do not leave the fermentation for too long unfiltered as poor flavour profiles can result. If using substrates other than pure sugars contact us for technical support.
